Inspired Flavors of Tacos El Cabron
On the menu inspired by traditional recipes and the flavors of Tijuana, birria, adobada and spicy shrimp tacos, burritos, queso tacos upgraded with cheese, individual portions of the birria spicy stew, mulitas, and oversized orders of fries stacked with steak, spicy pork, or shrimp.

UNLV College Town New Eats
Located close to UNLV and hoping to tap into the ongoing revitalization of the neighborhood, Tacos El Cabron is moving into the College Town retail center, already home to Jimmy John’s sandwiches, The Stake Out Bar & Grill and Starbucks.
Local favorite Roberto’s Taco Shop recently debuted its latest expansion on Maryland Parkway and now another San Diego-native is looking to launch its own casual Mexican menu, less than a two-minute walk away.
Tacos El Cabron Looking to Expand in Las Vegas
Tacos El Cabron’s first restaurant at Maryland Parkway’s College Town Shopping Center is in the final stages of construction, replacing a 2,520-square-foot Stir Krazy Mongolian Grill and hoping to attract diners from the surrounding UNLV population.
Currently building a patio and featuring its own indoor bar, the restaurant has posted temporary signage promising to be coming soon.
Even before Taco’s El Cabron opens, a second location is in the works for the westside, moving into another stand-alone building and filling 4,712 square feet at the intersection of Decatur Boulevard and Meadows Lane. An estimated arrival date has not been shared.
San Diego-based Jules Wilson Design Studio worked on the distinctive look of the Taco’s El Cabron Maryland Parkway restaurant and posted renderings of a possible third expansion, an impressive walk-up, outdoor venture at the Strip’s highly anticipated Resorts World Las Vegas. The images hint space would be created from shipping containers, but offer no further confirmation.
